Take the vacuum sealed bag or heavy-duty aluminium foil or storage container. Make sure that it is tight. Try to squeeze all the air out of bags, foil or storage containers whatsoever you are using. Otherwise, air will be responsible for germination of germs which will lead to spoilage of the meat.

I recommend you to use a vacuum sealed bag for storing in the fridge. Important tip is for you. Use this meat as soon as possible. Otherwise it will lose its flavour, texture and quality.

Storing Pulled Pork in the Freezer

Freezing and storing the pork in the freezer is a great method. This method is helpful when you are storing the pork for a longer period of time.  This method is my favourite one.

Take the freezer paper, aluminium foil paper or vacuum seal bag to store. Wrap your meat in any of the above mentioned ways. Take the meat now and place it in the freezer.  Keep in mind that all the air should be squeezed out of the vacuum bag or sealed container.

You can use plastic paper instead of foil or freezer paper. Plastic paper is perfect to keep the freezer out of smell. Freezer is used if you are planning to store it for 2 to 3 months.

Firstly , you have your pork meat, secondly, 2 towels ,thirdly foil paper,fourthly a thermometer and fifthly a cooler. Bear in mind that the serving temperature for pulled meat is  140°F. 

 Take the towels and place them in the cooler. Towels will act as an insulating cooler. Wrap up the pork meat in the foil paper and cover it tightly. Keep the thermometer in the cooler in order to monitor the temperature. Warm up the cooler until it reaches the required temperature that is 140°F. .

It is my personal experience that  this method works only when you have the plan to store the meat for 3 to 4 hours.

The Wozniak Method

This method was invented by Mike Wozniak in the city of Kansas in 2010. What is this method all about? 

This method is to chill the pork after cooking. Wrap up the meat in a foil paper water tight plastic bag.  Place in a cooler filled with ice. Once you get the temperature below 40° F.

This is not ready to place in the fridge and freezer. It will keep the meat fresh, juicy and in good quality. You can store this meat in the fridge for 3 to 4 days.  But, storing the meat in the freezer will be for 2 to 3 months.
